1. The non-stick surface of these pans is superior to any non-stick surfaced pans my wife and I have used. One can literally wipe them clean with a dry dish towel.
2. The bottoms of this set of pans have special heat conductivity, which allows even cooking around the edges of the pans.
3. The heat is so even that you do not have to cook on anything higher than medium (Cuisinart recommends that one should not use the pans on anything higher than medium). The pans are also great for simmering on the lowest heat setting.
